Ingredients:
- 100g smoked ham - 100g cheese - 3 eggs - 1 tsp butter - 2 tbsp. Herbes de Provence - Tarsmak mustard paprika sauce - 2-3 cherry tomatoes - 2-3 sprigs fresh basil or other herbs - salt, black pepper to season
Preparation: Cut the ham into strips, fry till browned in a bit of oil and set aside. Add the Herbes de Provence to the eggs, season with salt and beat thoroughly. Heat the butter in a non-stick frying pan and pour in the eggs mixture to cover the pan bottom. Using a fork or a spatula, lift the set edges to allow the runny egg to travel underneath. When the edges are already browned and the centre still runny, top the omelette with ham and grated cheese, cover with a lid and leave over a low heat for approximately 40 seconds. Then slide the omelette onto a plate, sprinkle over the Tarsmak mustard paprika sauce and garnish with the cherry tomatoes and fresh herbs.
